Ingredients
  

  • 1 box 15 oz yellow cake mix
  • 1 cup mashed overripe bananas about 3 medium bananas
  • 2 large eggs
  • 1/3 cup oil or melted butter or substitute with applesauce for a healthier version
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup chopped walnuts or chocolate chips optional

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line your loaf pans with parchment paper.
  • Prepare Batter: In a large bowl, mix the yellow cake mix, mashed bananas, eggs, oil, vanilla extract, and cinnamon (if using). Stir until just combined—avoid overmixing.
  • Add Mix-ins: Fold in walnuts, chocolate chips, or your favorite mix-ins, if desired.
  • Distribute Batter: Pour the batter evenly into the prepared pans, spreading it out with a spatula.
  • Bake: Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool: Let the banana bread cool in the pan for 10 minutes. Then transfer to a cooling rack to cool completely before slicing.

Notes

  • Quick Ripening Tip: If your bananas aren’t ripe, bake them at 300°F for 15-20 minutes until the skins turn black.
  • Muffin Option: You can make muffins instead by dividing the batter into muffin tins and baking for 20-25 minutes.
  • Storage: Store banana bread at room temperature for 2-3 days in an airtight container. For longer storage, freeze for up to 3 months.
