Ingredients

Main Ingredients:

  • 4 large eggs separated into whites and yolks
  • 100 g ½ cup granulated sugar
  • 60 g ½ cup all-purpose flour (sifted)
  • 1 tsp vanilla extract
  • 1 tsp cream of tartar optional, for stabilizing egg whites
  • 2 tbsp powdered sugar for dusting

Optional Garnish:

  • Fresh berries strawberries, raspberries, or blueberries
  • Honey or maple syrup for drizzling

Instructions

Prepare the Ingredients:

  • Separate the egg whites and yolks into two bowls.
  • Make sure the egg whites have no trace of yolk.

Whip the Egg Whites:

  • In a clean mixing bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the sugar while beating until stiff peaks are achieved.

Mix the Batter:

  • In a separate bowl, whisk the egg yolks and vanilla extract until smooth.
  • Fold in the sifted flour gently.
  • Gradually fold the whipped egg whites into the yolk mixture in three additions, being careful not to deflate the batter.

Prepare the Pan:

  • Line a springform pan with parchment paper and pour the batter evenly.
  • Smooth the surface with a spatula.

Bake the Cake:

  • Preheat the oven to 160°C (320°F) and bake the cake for 30–35 minutes, or until the surface is golden brown and a toothpick inserted in the center comes out clean.

Cool the Cake:

  • Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
  • Then transfer to a wire rack to cool completely.

Serve:

  • Dust the top with powdered sugar and garnish with fresh berries.
  • Optionally, drizzle with honey or maple syrup for extra sweetness.

Notes

  • Make sure the egg whites are free of any yolk to achieve the perfect fluffy texture.
  • For an added twist, you can flavor the cake with a pinch of lemon zest or almond extract.
  • This cake is best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days.
