Ingredients
  

  • 1 cup cornmeal whole-grain for a healthier option
  • 1/2 cup all-purpose flour or gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk or dairy-free alternative
  • 1 large egg
  • 2 tablespoons melted butter or coconut oil
  • 2-3 tablespoons cooking oil for frying

Instructions
 

Prepare the Batter:

  • In a large bowl, whisk together cornmeal, flour, baking powder, and salt. In a separate bowl, mix buttermilk, egg, and melted butter.
  • Combine wet and dry ingredients until just mixed.

Heat the Skillet:

  • Heat 1 tablespoon of oil in a skillet over medium heat.

Cook the Hoe Cakes:

  • Pour 1/4 cup of batter into the skillet for each hoe cake.
